My husband was making grilled chicken tonight (to restock our supply) and asparagus as well. My son doesn’t care for asparagus, so making this carrot dish is too easy (also more asparagus for me!).
This is one of those “how can this be that easy and taste so good” kind of dishes. Start to finish is just over 10 minutes. A bag of baby carrots, butter, salt and sugar with a bit a cinnamon at the end of the cook and I have a very happy young man. He actually ate the entire side dish himself.
You’ll need:
12 oz bag of baby or mini carrots
1 1/2 Tbs unsalted butter
1 1/2 tsp sugar
1/2 tsp salt
hot water as needed
1/4-1/2 tsp ground cinnamon (to taste)
In a shallow saucepan or skillet, melt the butter, add the bag of carrots and stir. Sprinkle in salt and sugar and stir again. Add enough hot water to almost cover the carrots. Cover and bring to boil.
If you like your carrots completely cooked: Continue to cook covered until carrots are tender.
If you like your carrots just tender: remove lid when water begins to boil.
Continue to cook carrots uncovered until water is almost completely gone. Sprinkle on cinnamon and stir until coated and last of water is evaporated. Serve immediately to happy tummies! Enjoy!
