Autumn Fruit Salad (so not your mom’s)

Fruit salad can be so much more than what we had as children.  This salad has a very spare dressing so the most important thing can shine through….the fruit!  Crisp and sweet Pink Lady Apples and Bosc Pears with soft and tart blackberries!  Walnuts and dried cranberries with a dressing of lime juice, fruity olive oil and cinnamon compliment the fruit with a sprinkle of fresh cilantro.  Your mouth will be very happy!

Because of its simple bright taste, it’s a great salad to eat with strong flavored meat dishes.  I serve it with a roasted garlic chicken dish and a crusty sour dough bread.  The fruit salad cleanses the palate and is a wonderful foil to the chicken.  It’s also great with smoked or grilled meats and sausages.

This salad will keep for a day in the refrigerator so any leftovers are great for a packed lunch.

You’ll need: makes 5-6 servings

2 Pink Lady apples, cored and chopped

1 Bosc Pear, cored and chopped

6-8 oz of fresh blackberries

1/4 cup dried cranberries

1/2 cup chopped walnuts

1/4 cup chopped cilantro

Dressing

1 Tbs lime juice

2 Tbs fruity olive oil

1/2 tsp kosher salt

1/2 tsp ground cinnamon

1/4 cup fresh mint or 1 Tbs dried mint

1 Tbs local honey

Whisk the dressing ingredients together and set aside.  In a medium bowl, combine the chopped fruit, dried fruit and nuts.  Pour the dressing over it and sprinkle with the cilantro.  Gently mix together.  Serve at room temp.  Enjoy!
