Saying I love grilled fruit just doesn’t really get the feeling right. I can say it, but my taste buds know that its so much more than that. Grilled fruit is almost as wonderful as roasted fruit. If I had to pick between roasted fruit and breathing….well. I guess I should say. Could I choose between them? Breathing is overrated to say the least.
In steps grilled fruit pizza. Quick, easy, Delish!! To my favorite fruit..peaches and cherries, add a couple of nice flavors. Prosciutto, and bellavitano cheese. (I’ve also used an aged gouda shown above-YUM!) And after its grilled….fresh basil and a drizzle of an aged balsamic.
This works best as an appetizer than a dessert. Delights all the senses and gets everyone wanting more. Just what an appetizer is supposed to do. My family loved it.
You’ll need:
1 prebaked pizza crust (I like whole wheat for this)
2-3 fresh peaches, sliced thin (any stone fruit will work- berries work as well)
1/2 cup or more of a second fruit (cherries, blueberries)
3 oz prosciutto (optional-but so good)
1 1/2 cups of bellavitano cheese, fine shred. (I used the balsamic one)
1/2 fresh basil, sliced into thin strips (chiffonade)
Good quality aged balsamic vinegar.
Olive oil as needed
Place a pizza stone on the grates. Fire up the grill. Heat to 400-425 F.
While the grill is heating up….
Lightly brush coat the pizza crust with a think layer of olive oil. Sprinkle about half of the grated cheese over the crust. Layer on the peaches and cherries however you like (random or pattened). Add prosciutto in scrunched pieces. Top with remaining cheese.
Grill the pizzza for about 6-7 minutes until cheese is melted and fruit has softened. Remove and allow to cool for a few minutes. Sprinkle with fresh basil and aged balsamic. Slice and serve immediately. Enjoy! (Expect the conversation to stop until the pizza is gone)
