For every parent, getting kids to like vegetables can be challenging. So it was with my youngest son a while back. I love fresh green beans, but no matter how I fixed them, he didn’t want to eat them. He has always been a mustard fan, no matter what kind (and that is still true to this day). So when I found a recipe using mustard as a glaze, I had to try it. It was a big hit and it’s now part of our regular meals. My son is no longer little and he still loves this dish.
Its also very easy to make. One of my best good food not much time successes. We have been eating this dish for many years.
olive oil, as needed for saute
2 lbs fresh green beans
1 Tbs stone ground mustard
1 Tbs maple syrup
1/2 cup chopped walnuts (optional)
salt and pepper to taste
Rinse green beans and trim off stems and ends. Snap into pieces about 2 inches long. You’ll end up with about 1 1/2 lbs.
Heat a large cast iron skillet over medium heat. Add olive oil and then green beans. Saute until the green beans turn bright green and are starting to get tender. Add salt and pepper and saute a few more minutes. Then sprinkle a little water in the pan and cover to steam them for about 2 minutes.
While beans are cooking, combine both mustards and maple syrup. Mix until smooth. Add to the almost done green beans. Then add walnuts and saute one minute more, stirring often.
Turn off heat and serve immediately. Don’t expect leftovers. Tonight we enjoyed them with Jim’s grilled meatballs and fresh tomatoes. Enjoy!
