“Not your mom’s” Tuna Salad

Tuna salad when I was growing up was all about mayo and mustard….like any other: potato salad, egg salad…you know what I’m talking about.

How about a tuna salad with no mayo, no mustard?  I’m not interested in hiding the flavor of the tuna.  I want to complement it and give it something to dance with while it makes my mouth happy.

Tuna is a strongly flavored fish, so to complement it, your going to need flavors that are up to the challenge:  crunchy Pink Lady apples and chopped walnuts, fresh tarragon and red onions, fresh greens, garden ripe grape tomatoes, and a generous amount of tart feta cheese.  Place all of these in an 8 grain pita pocket and you’ve got something that is not only delicious, but something that is healthy as well.  Mayo and mustard are so not required!  Start to finish in only 10 minutes. Great for your lunch box.

Makes 4 servings

You’ll need:

1- 6 oz. can of chunk light tuna (spring water pack), drained

1/2 cup feta cheese, crumbled

1/2 medium pink lady apple, cored and chopped

1/4 cup walnuts, chopped

2 tbs chopped fresh tarragon

1/2 cup red onion, diced (and/or 1/2 cup sweet pepper, diced)

salt and fresh ground black pepper, to taste

2 cups leaf lettuce

1 cup grape tomatoes, sliced in half

1-2 tbs pear infused white balsamic vinegar (Alessi makes a wonderful one)

2 multi-grain pita breads, halved ( Oroweat has an 8 grain and an Italian herb-both very tasty)

In a medium bowl, combine tuna, feta, apple, walnuts, onion/peppers, and tarragon.  Mix well and add salt and pepper to taste.  Sprinkle with vinegar and mix again.  Open pitas, put about 1/2 cup of greens in the bottom and top with about 1/3 cup tuna mix.  Top with sliced tomatoes and serve.  Enjoy!
