My son stated that he is “in serious need of some pancakes”. He stated this enough times that I relented….it has been awhile. I decided to let him make them for dinner tonight. He loved the idea and started looking for recipes. He found one for cinnamon chip pancakes, but the recipe needed help. So we gave it. Added whole wheat, buttermilk, orange juice, pecans and just a little nutmeg.
You’ll need:
1 cup whole wheat flour
1 cup unbleached flour
3 Tbs raw sugar
2 Tbs baking powder
1/2 tsp salt
1/4 tsp fresh grated nutmeg
1/2 cup cinnamon chips
1/2 cup chopped pecans
1 cup buttermilk
1 cup orange juice
1/3 cup oil
2 eggs
In a medium bowl, combine both flours, sugar, baking powder, salt, nutmeg, cinnamon chips and pecans. Set aside. In your mixing bowl, combine remaining ingredients until mixed. With speed set on low, gradually add the dry mixture and mix until just combined.
On a heated griddle (mine is cast iron), place 1/3 cup scoops and cook over medium low-heat until edges begin to dry. Flip and cook the other side.
We started gobbling these up before I could even have a proper serving ready. I had to insist we stop long enough for me to have some for a picture!
Serve with maple syrup (or your favorite). Enjoy!
Those pancakes look perfect. I bet that the orange-cinnamon flavor gives them a very refreshing taste
