Smoked Pork Loin with Thyme and Garlic

I have an electric smoker.  My husband gave it to me as a Christmas gift several years ago.  No, it is not as nice as the charcoal smokers you see, but its not too bad.  I am not a serious BBQ person, but I do enjoy good BBQ and do like smoked meats.  I live 30 miles from Kansas City-good BBQ town!

When its hot, I always try to find ways not to heat the kitchen.  I also don’t want to run my gas grill for hours; thus my need for a smoker.  Its nice because the heat is consistent like a gas grill, but doesn’t empty your propane tank.  I thought a pork loin smoked with thyme and garlic sounded tasty.  I used apple wood for the smoking.  We had it with green beans with walnuts and mustard maple glaze.

You’ll need:

3 lb pork loin, trimmed of excess fat

olive oil as needed

2 tsp dried thyme

1 tsp kosher salt

1/2 tsp fresh ground pepper

1 tbs dried garlic

Combine salt, pepper, thyme and garlic. Thinly coat pork loin with olive oil,  sprinkle with garlic thyme mixture and run in.  Allow roast to set for 30 minutes.

Place in smoker with wood of your choice.  Smoke at 225F for 2 1/2 hours or until internal temp reaches 155F.  Remove and let rest before slicing.  Enjoy.
