Double Chocolate Hazelnut Cookies

My family is a bunch of chocolate nuts…really.  We love chocolate and nuts, especially together.  We want it, but I don’t want to feel any more guilty than necessary.  Therefore, I am always trying to make them have great taste without so much sugar and fat.  I am not a health nut.  I simply believe in making my calories count.  This is a great cookie, with no white sugar and part whole wheat flour.  They are also small, but have big flavor so you won’t need to eat a lot of them to satisfy your chocolate needs.  Makes 3 dozen cookies

You’ll need:

1 cup all purpose flour

A scoop makes it easier

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp salt

1 1/2 sticks of unsalted butter, softened

1/2 cup raw sugar

1/4 cup maple syrup

1/3 cup dutch cocoa powder

1 egg

1 tsp vanilla

1 cup chopped hazelnuts

1 cup semisweet chocolate chips

Preheat oven to 350F

In an electric mixer, cream butter, raw sugar, and maple syrup.  Add cocoa powder and mix thoroughly.  Add eggs and vanilla, beat until light and fluffy.  In a separate bowl, combine flours, baking powder and salt.  Add dry mixture to wet and mix until just incorporated.  Add nuts, chips and stir in by hand.

Using a cookie scoop or spoon, place tablespoon size scoops on a parchment paper covered baking sheet.  Bake for 12 minutes.  Allow to cool for 5 minutes on sheet and then remove cookies to cooling rack.  Cool completely.  They may be small, but the taste is not.  Enjoy!
