This is a favorite dessert around our house. It can be made with fresh or frozen berries and comes together quickly. If your not a blackberry fan, substitute something that is to your liking. I tend to make this in individual servings because of certain people who don’t leave enough for others…no names. Makes 4 ample servings
You’ll need:
Preheat oven to 375F
1 cup walnuts, divided
1/2 stick butter, softened
1/2 cup raw sugar
1 Tbs mild molasses
1/4 tsp salt
1/2 cup half and half
2 large eggs
1 tsp vanilla extract
1/2 cup whole wheat flour
1/2 cup shredded wheat cereal, crushed
1/2 tsp baking powder
2 cups blackberries
In a food processor, combine 1/2 cup walnuts, butter, sugar, molasses, salt and process until nuts are finely ground. Add the half and half, eggs and vanilla. Process until smooth. Add flour, cereal and baking powder, pulse until just incorporated.
Into four greased oven proof soup mugs or similar containers, place approximately 1/2 cup batter into each dish. Sprinkle in generous portions of walnut pieces and blackberries. Add remaining portion of batter and top with more walnuts and berries. Bake for 45 minutes. Serve warm.
Note: I use shredded wheat because its my son’s usual cereal and I always have crumbs at the end of the bag/box. I save these and add them into recipes. If you don’t.. just use 1/3 cup half and half and 3/4 cup whole wheat flour to get similar results.
