I love sweet potatoes. I especially like them roasted. It brings out their natural sweetness. My oldest son had always told me he didn’t like sweet potatoes….until he tasted this dish.
6 medium sweet potatoes, peeled and ends trimmed off, cut into 1/2 inch slices
3 Tbs maple syrup
2 Tbs melted butter (I use unsalted)
1 1/2 tsp dried thyme, crushed
2 Tbs cannola oil
salt and pepper
In a small bowl, combine melted butter, maple syrup and crushed thyme. Set aside for flavors to blend.
Place potato slices in a medium bowl and add oil, salt and pepper, toss to coat.
Using a half baking sheet (either lined with foil or lightly oiled) pour seasoned potatoes into it and spread into a single layer. Cover sheet with foil and crimp at the edges.
Place pan into oven and turn temp to 400 degrees and bake for 25 minutes. Remove pan and then carefully remove foil, return to oven and bake for another 15 minutes.
Remove pan from oven and brush slices with butter/syrup mixture. Flip slices and brush other side.
Return pan to oven and bake for 15 more minutes. Remove and let cool for 5-10 minutes and serve.
