Fruited Pork Chops

We had an occasion this last week when my husband was cooking when he thought he “forgot” to get the meat out of the freezer to grill that evening.  So….he got out some more meat!  We ended up with 2 packs of 6- 1 inch pork chops for just 3 people.  He grilled the first set that night.  We needed something different to do with it for the next evening.  I remembered fixing pork with dried fruit and had him make this in the slow cooker the following night.  It’s simple and delicious, two of his favorite things when he cooks.

You can use whatever dried fruit you like, but keep the total to one cup unless you like your BBQ pretty sweet.

In you slow cooker, add in the following order

6- 1 inch thick pork chops trimmed of fat.

1/2 cup golden raisins

1/2 cup dried cranberries

1  cup of diced sweet peppers ( I use Jimmy Nardello)

1 1/2 tsp dried thyme, crushed

1 cup of your favorite BBQ sauce ( I like Hillside Bank), poured over the top of everything else.

Cover and cook on LOW for 3 1/2 hours or on HIGH for 2 hours.

I suggest serving with cornbread muffins and coleslaw.  YUM!
