Garlic Marinated Broccoli

My sister-in-law got me to put lemon juice (instead of cheese sauce) on broccoli  when my boys were young.  Now that they are as tall or taller than I am, we have moved on to more delectable versions of broccoli.  This  recipe has it’s roots from “Recipes from a Kitchen Garden.”  I highly recommend this book to all my gardening friends.    I didn’t have to tweek it very much to get it where I wanted it.  I have used this recipe so often the page is stained with my kitchen mishaps.

This is excellent with grill meats.  Make the broccoli first and let it marinade for about 30 minutes before serving.

You’ll need:

In a small mixing bowl combine:

6 Tbs “good” Olive oil (this is a good time to use that “first press” stuff)

2 tsp minced garlic

4 Tbs chopped fresh basil or equal amount of “basil slurry”(from:Enjoy fresh basil flavor till next season)

1 tsp fresh or 1/2 tsp dried oregano

1 1/2 Tbs soy sauce

2 Tbs red wine vinegar

2 Tbs balsamic vinegar

Fresh ground pepper to taste

Take one large head of broccoli cut into bite size pieces.  Place in a microwave container.   Cook until tender crisp.  Drain any excess water.  Place in serving bowl.  Immediately add all of the olive oil mixture and mix.  Let this stand for 10-30 minutes.  Mix again before serving.
